There is nothing like indulging in a meal that makes you feel like you are on vacation. One of my favorite dishes is fried rice. I love a delicious, homemade, fried rice dinner.

I’m excited to share with you this easy and delicious meal that my boyfriend made for both of us one evening. It is quick, simple, and flavorful. His presentation put it over the top, and made me feel as if we were out dining at a fancy restaurant. It was fantastic. This is not your ordinary fried rice! It is an amazing fried rice made with fresh ingredients like pineapple, cilantro, and corn
Ingredients
● 1 pineapple
● 2 cups rice, white or brown. I prefer white rice, but either will work.
● Olive oil
● Minced garlic
● Diced onions
● Cilantro
● Corn
● Diced tofu
● Soy sauce
● Black pepper
● Cayenne pepper
● Salt
Instructions
Cook the rice and set aside until you are ready to use it. While the rice is cooking, prepare your other ingredients.
Slice the pineapple in half. Scrape or spoon the pineapple out of its shell, but be gentle here. You’ll use the rest of the pineapple for presentation later.
Dice the pineapple pieces and set aside.
Sauté the pineapple with the garlic, diced onions, and corn in a skillet with olive oil over medium heat. Next, add the cooked rice to the saute, mixing the rice and vegetables together.
Add tofu and let simmer in the rice for about ten minutes. Add soy sauce to taste, noting that soy sauce can add a lof of salt. Add a little at a time, and taste to find the perfect balance.
Add the seasonings to taste, then scoop into the pineapple halves. Serves two.
Simple enough, right? It is, and not only is it so simple, it is also extremely delicious! Make it a date night in, and serve this with some delicious homemade cocktails.

ReplyDeleteLooks DELICIOUS! I get this in Thai restaurants sometimes (and it often comes with cashews, which make it all the more delectable), but sounds like it's not too hard to make it at home.
